Ingredients

    Quaker Oatmeal- Plain (1/2 cup dry)
    Cheezit four cheese crisps (18 crisps)
    Egg, fresh, 2 medium
    Saltine Crackers, 0.66 cup, crushed
    Zucchini, 2 cup, shredded
    Parmesan Cheese, grated, .125 cup

Tips

Let sit in fridge for 30 mins before cooking. It will be easier to form into cakes.


Directions

shred zucchini, mix with crushed saltines/cheez-its, oatmeal, egg. form into cakes and bake or cook in pan. The oatmeal helps to absorb moisture from the zucchini.

Serving Size: 4 cakes, half cup per cake.
