    12 oz. ziti noodles
    1 lb. Italian sausage
    1 medium yellow onion, diced
    2 cloves garlic, minced
    1 tsp. red pepper flakes
    1 29-oz can tomato puree
    1 14-oz. can diced tomatoes (no salt added)
    1 cup fresh basil leaves, chopped
    1 cup shredded mozzarella cheese, part skim
    1 Tbsp. grated Parmesan cheese


The amount of red pepper flakes can be increased or decreased according to heat preference.


Preheat oven to 400 degrees.

Prepare ziti according to package instructions, minus one or two minutes (pasta will finish cooking in oven).

Meanwhile, brown Italian sausage in a deep skillet over medium heat. Drain excess grease and add onion, garlic, red pepper flakes, salt and pepper. Cook until onions are translucent. Stir in tomato puree and diced tomatoes. Turn down heat and allow sauce to simmer for 10 minutes.

Drain noodles and add to sauce along with basil leaves and mozzarella cheese. Transfer to a 9X13 baking dish. Sprinkle with Parmesan cheese and cover with aluminum foil. Bake for 15 minutes. Remove foil and bake uncovered for an additional 10 minutes.
