    Beets, sliced
    Olive Oil-Extra Virgin
    Sea Salt,
    Carrots, raw,
    Parmesan Cheese
    Cider Vinegar
    Red Kalamatta Olives, sliced
    Fresh Black Pepper


Clean kale and place in a bowl along with all other ingredients. Baby kale is best. If regular kale is used, break into smaller, bite sized pieces. Fold in carefully each of the kale leaves, ensuring they are completely moist. For best results, allow mixture to sit for two hours, chilled, before serving.

Serving Size: Serves 6. Great for a light meal or as a side dish.
