    2 Tablespoons olive oil
    1 onion chopped
    1 cup celery
    4 cups mushrooms
    1 cup chopped carrots
    2.5 cups chopped peeled potatoes
    1 pound cooked shredded chicken breast
    2.5 quarts chicken broth
    1/2 cup chopped parsley


Heat oil in soup pot. Saute onions, celery, mushrooms until tender. Stir in carrots, potatoes, chicken. and broth. Bring to a boil. Reduce heat. Simmer 20 minutes. Remove from heat and stir in parsley.
