    1 block firm tofu, drained well
    1 can whole kernel corn, drained
    1 can diced green chilies
    1 can mushrooms, stems & pieces
    1 sm onion, diced
    McKay's Chicken Seasoning to taste
    Nutritional Yeast Flakes to taste
    Tater Tots, baked until very crisp


Using a fork, mash the tofu in a non-stick skillet until it resembles scrambled eggs. Add remaining ingredients, except for Tater Tots, and enough water to simmer in. Simmer until water is almost gone, stirring occasionally. Add baked Tater Tots, cut in half. Spoon into tortillas and serve with ketchup or salsa, or fresh tomato.

Makes 6 to 8 burritos.

*may also substitute cubes of baked, fresh potatoes in place of Tater Tots
