Introduction

This is a modified recipe. The original recipe calls for water, not chicken broth, and adds a teaspoon of salt, which I omit. Add other seasonings if desired. I often add black pepper and garlic powder to give it a little more flavor. This is a modified recipe. Ingredients

    1 1/2 cups medium or long grain brown rice
    2 1/2 cups Swanson 99% fat free chicken broth
    1 T unsalted butter

Directions

Place rice in 8 quart casserole. In small saucepan, bring chicken broth, butter and salt to a boil. Pour over rice and stir. Cover tightly with foil, and then another lid if possible, or another layer of tin foil. Bake at 375 for one hour. Do not peek! Remove from oven and let stand for 5 minutes before uncovering. Fluff with fork and serve!
