    1/4 cup chopped onion
    2 cups fresh spinach
    1 cup chopped mushrooms
    1 egg
    1 cup egg substitute
    1 cup shredded lowfat cheddar cheese
    1/2 cup bisquick
    1 cup milk


Saute onions and mushrooms, then add spnach and cook until wilted. Mix this with remaining igredients. Put in prepared pie plate and bake at 400 degrees F for 25 minutes.

Makes four large servings (1/4 of pie)
