Ingredients

    1 can Crushed Tomatoes - (No Salt Added)
    1/4 cup Whole Grain Quinoa
    1 can drained Cannellini Beans (White Kidney Beans) drained
    1 can Butter Beans, drained
    1/4 cup onion chopped
    1/4 cup Celery diced
    1/4 cup frozen sweet corn
    1 large clove garlic
    2 Tbsp ground cumin
    6 ounces, one large boiled chicken breast shredded

Directions

Brown onions, celery, and garlic in oil. Boil chicken in water, cook Quinoa in separate pan. When chicken is cooked, cup up or shred. Add crushed tomatoes to browned vegetables, add drained beans, Quinoa, and sweet corn. Add seasoning to taste. Simmer together 45-60 minutes.
