    6 large potatoes
    2.5 cups vegetable (or chicken) broth
    4 green onion, chopped (optional, reserve for garnish)
    3-4 cloves garlic, minced
    2 cups milk (I used 2%)
    fresh ground pepper, to taste
    1 cup sharp cheddar cheese, shredded

    You could easily add chicken to make it a bit more hearty, I'd say 8 oz of cooked, shredded chicken)


Cut potatoes into 1 to 2 inch pieces.
Add all ingredients but cheese to crock pot. Cook on love for 6-8 hours or high for 3-4 hours. Remove lid and mash potatoes with a potato masher, stir in cheese. Replace lid and cook for 5 ish minutes until the cheese is melted. Pour into bowls and garnish with green onion if desired.
Serves: 7

Serving Size: 1 1/2 cups
