    1 cup unsalted butter, melted and cooled
    3/4 cup low-fat buttermilk
    2 cups whole wheat flour
    2 cups old-fashioned or quick cooking oats
    3/4 cup honey
    2 eggs
    1/2 tsp salt
    1 tsp baking soda
    1 tsp vanilla
    1 cup semi-sweet chocolate chips


Wrap in plastic and it makes a great portable breakfast or snack. It freezes well too.

Makes a great dessert as well. Just add low-fat cool whip topping!


Preheat oven to 350 degrees F.
Grease a 9x13 inch pan.
With a stand mixer, add all ingredients but flour and chocolate chips. Once other ingredients are incorporated add flour until just combined, then stir in chips.
Dump into greased pan. Bake 25-35 minutes or until toothpick comes out clean. (Mine was done at 25 minutes).
Let cool for a few minutes. Cut into 12 squares and serve warm.
