Spicy Shrimp and Bok Choy stir fry Spicy Shrimp and Bok Choy stir fry

    6 0z shrimp thawed
    4 scallions (white and green parts thinly sliced and kept separate
    2 garlic cloves
    2 tsp canola oil
    2 cups bok choy chopped
    3 tbsp low sodium soy sauce
    3 tbsp chili garlic sauce


In a large bowl combine shrimp, scallion whites and garlic. In a wok or large skillet heat oil over medium high heat. Add shrimpmixture and cook through 3 to 4 minutesuntil shrimp is pink. Tranfer to a bowl and set aside. Retunr pan to heat and add bok choy. Cover and cook until crisp tender 3 to 4 minutes. Drain any liquid from pan. Add bok choy and shrimp to pan and add soy sauce and chili garlic sauce. cook breifly to coat shrimp and bok choy. Stri in green scallions and serve.
