Ginger Dijon Glazed Pork Loin Ginger Dijon Glazed Pork Loin

    1 1/2 Tbsp Dijon mustard
    1 Tbsp reduced fat sour cream
    1 tsp freshly grated ginger
    1/4 tsp Thyme
    1 1/2 lbs pork loin
    1 clove of garlic thinly sliced
    1 1/2 tsp extra virgin olive oil
    1/2 tsp ground black pepper


Het oven to 45o. In small bowl stir togethr mustard, sour cream, ginger, thyme and set aside. Make several 1/4 slits in pork loin. Slip garlic into the slits. Brush loin with oil and season with pepper. Heat large cast iron skillet on high heat. Add pork loin and brown on all sides. About 5 minutes. Remove from pan. Spread mixture over pork then transfer the skillet to the oven and cook until a meat thermometer inserted into the center registers 150F. About 30 minutes. Remove from pan and trnasfer to a cutting board. Let rest for 5 minutes before slicing.
