    Ingredients
    2 cups water
    1 cup quinoa, rinsed
    1 small onion, chopped
    1 tablespoon olive oil
    1-1/2 cups frozen peas
    1/2 teaspoon salt
    1/4 teaspoon pepper
    2 tablespoons chopped walnuts

Directions
In a large saucepan, bring water to a boil. Add quinoa. Reduce heat; cover and simmer for 12-15 minutes or until water is absorbed. Remove from the heat; fluff with a fork.
Meanwhile, in a small skillet, saute onion in oil until tender. Stir into cooked quinoa. Add the peas, salt and pepper; heat through. Sprinkle with walnuts (optional). Yield: 6 servings.
