    1 cup wild rice
    2 cups low sodium beef stock
    1 cup dried wild mushrooms
    1 1/2 cups water
    1/2 tsp rosemary
    salt and pepper to taste
    5 cloves of roasted garlic, mashed
    1/2 tbsp olive oil


This is a great accompaniment to any beef dish, but also stands well on its own.


Bring the water to a boil and put dried wild mushrooms in water to steep until softened.

Once the mushrooms are softened, drain one cup of the mushroom water and mix with the beef stock and wild rice in a sauce pan. Stir in rosemary and bring to a boil. Reduce heat, cover and simmer until most of the rice is split and tender, about 45 minutes. Meanwhile, chop the mushrooms and put aside.

Remove rice from heat and let stand, covered, for 5 minutes. Drain rice through a siv and collect cooking stock. Put rice aside.

In a large, deep frying pan heat olive oil until hot and put mushrooms in the pan and fry them until they are warmed through and fragrant. Mix garlic in with mushrooms and stir fry for 30 seconds or until well mixed. Pour in 3/4 of a cup of the rice cooking stock and reduce down by half scraping up any bits stuck to the pan. Stir in wild rice and mix well until rice is coated and heated through. Salt and pepper to taste.


Serving Size: makes approximately 4 1-cup servings
