Ingredients

3 Tbls grated carrot
6 Tbls chopped red onion
diced jalepeno to taste
1.5 tsp olive oil
1 14.5 oz can diced tomatoes
3 extra large eggs
3 oz low fat cheddar, grated
Directions
Preheat oven to 375 degrees.
Chop vegetables.
Heat oil in oven proof pan.
Add carrots, onions and jalepeno and cook a few minutes.
Add tomatoes to pan and simmer about 5 minutes to incorporate flavors.
Make 3 holes in the tomato mixture and crack one egg into each hole.
Sprinkle top with cheese.
Place in an oven for 5 minutes for runny yolks or onger as desired. Not more than 10 minutes.
Serve with toast points.
