    Corn Tortillas (5-6)
    Shredded Fancy Mexican Blend
    Lean Ground Beef 96/4
    1 Can Beans (kidney or black), drained and rinsed
    1 Can (or 1/2 carton) diced tomatoes
    1/2 Packet Taco Seasoning

    Additional toppings:
    -avocado slices
    -fage 0% yogurt or FF sour cream
    -more chz
    -lettuce, onions, etc. etc.


Cook the Beef in a skillet, add tomatoes (undrained) and taco seasoning (1/2 packet for mild, 1 whole packet for spicy).
Add beans.

In casserole dish, layer:
Corn Tortillas (tear to fit if dish is square)
Beef/tomato/bean mix
3/4 c. shredded cheese


End w/ tortillas if you want--will get crispy.
*or* end w/ beef.

Bake at 350 for 20-30 mins.

If you ended your layers w/ beef, bake for 15-20 mins, add some more cheese and bake for 10 more mins.

garnish with any/all additional toppings!
