    4 cooked, boneless and skinless chicken breasts (about 1 lb), cubed or shredded
    2 cans cream of chicken soup
    4 oz cream cheese, softened
    1 tube Ritz crackers, crushed
    1 Tbsp poppy seeds

    1 tube Ritz crackers, crushed
    2 Tbsp unsalted butter, sprinkled over chicken mixture
    1 tsp poppy seeds, sprinkled on top


Serve this with 1/2 cup brown rice, vegetables or side salad.


Preheat oven to 325 degrees F.
Combine all casserole ingredients in a mixing bowl and pour into a 9x13 inch pan.
Combine all topping ingredients in a separate small bowl and pour over casserole.
Bake for 25 minutes until golden brown and bubbly.
