    1 1/2 C Egg Whites
    1 1/2 C Oats
    1 1/2 C Cottage Cheese
    6 drops of liquid sucralose or 6 packets of splenda
    1/2 tsp lemon extract
    1 1/2 tsp Baking Powder
    1/2 C Blueberries


Preheat oven to 350. Put egg whites, oats, cottage cheese, splenda and lemon extract in blender. Blend until well mixed, add baking powder and blend on low for a few seconds to incorporate. Fill muffin tins, add a couple blueberries to the top of each muffin then put in the oven. Bake for 11-13 minutes.
