    1 LB Raw Chicken OR a Small Roasted Chicken From the Deli Equaling about 3/4 of a Pound Cooked.
    1 Cup Carrots (Small Dice)
    1 Cup Button Mushrooms (Small Dice)
    1/2 Cup Onion (Small Dice)
    1/2 Cup Celery (Small Dice)
    4 tsp All-Purpose Flour
    1 1/3 Cup Reduced Sodium Chicken Broth
    1/8 tsp Poultry Seasoning
    1/8 tsp Black Pepper
    1 Can (10 Biscuits) Pillsbury Country Biscuits


Preheat oven to 375 degrees. If using raw chicken, poach it and dice it. If using the roasted chicken, remove the meat (white & dark) and dice it. Spray a nonstick pan with nonstick spray. Add veggies and cook until tender, about 10 minutes. Sprinkle with flour, poultry seasoning, pepper, stir to coat and cook another couple minutes. Stir in the broth, bring to a boil. Reduce heat and and stir until thickened. Add chicken. Pour into a casserole dish and top, evenly with the biscuits (you may want to cut the biscuits into 4). Bake until the biscuits are golden brown.
