Ingredients

    2 cups Ezekiel flour
    1 cup Splenda
    1 Tbls baking powder
    1/2 tsp salt
    1 cup mashed ripe bananas (about 2 medium)
    1/3 cup milk
    1/3 cup peanut butter
    3 Tbls vegetable oil
    1 egg
    1/2 cup semi-sweet chocolate morsels
    1/3 cup peanuts, chopped

Tips

Bananas need to be very, very ripe for this recipe.


Directions

Preheat oven to 375F. Spray bottom only of Muffin Pan with vegetable oil. Combine flour, splenda, baking powder and salt. Add bananas, milk, peanut butter, oil and egg; stir just until dry ingredients are moistened. Stir in chocolate morsels and coarsely chopped peanuts. Spoon batter into pan. Bake 18 minutes or until Cake Tester inserted in center comes out clean. Cool in pan 10 minutes. Remove to Nonstick Cooling Rack. Cool completely.
