    1 Tablespoon Olive Oil
    2 Tablespoons Butter
    1/4 tsp Salt
    1/2 tsp Black Pepper
    1 tsp Basil
    3 Tablespoons All-purpose flour
    2 cups milk, 1 %
    3/4 cup finely grated Asiago cheese
    1/8 tsp freshly ground nutmeg


Melt butter with olive oil in a sauce pan over medium low heat. Add salt, pepper, and basil and stir. Add the flour, stirring constantly until its a nice golden color, approximately 3 minutes. Add milk all at once and stir until the flour mixture is incorporated. Turn up heat to medium and stirring constantly, cook until sauce is thickened, approximately 10 minutes. Add Asiago cheese and stir until melted. Grate fresh nutmeg over the top and stir until combined.

Serving Size: Makes 10 1/4 cup servings, approximately
