Ingredients

1/2 Onion- diced
3 cloves diced Garlic
2 Green Bell Peppers - diced
2 small/medium Summer Squash- diced
1 1/2 Cups Spinach
Water
1 Can Diced Tomatoes-low sodium (undrained)
1 Jar Tomato Sauce
1 Tbsp dried Parsley (optional)
1 tsp Basil (more as desired)
1 Tbsp dried Oregano
about 6 Whole Wheat Lasagna Noodles-BROKEN into pieces
1 Cup Non Fat Cottage Cheese
1/4 Cup Parmesan Cheese (or less)
Ground Pepper - to taste
a sprinkle 2% Shredded Cheese for cheese garnish
Tips
Can include mushrooms, black olives, etc. Lots of room to play around. I'm never very exact with the spice measurements. I add red pepper flakes for extra kick. This is great leftover. I think it is best with fine veggies but larger chunks are fine too.
Directions
Finely dice onion, bell pepper, garlic, squash. Stem and tear spinach into pieces. Saute all veggies in a sprinkle of olive oil, 5 mins or until softened. Add undrained diced tomatoes, tomato sauce, water, spices and noodles. Bring to a boil, stir occasionally. Reduce heat, cover and simmer 15 to 20 minutes til noodles are soft. Add cottage & Parmesan cheeses and cook 5 more minutes. Garnish with shredded cheese, add salt and pepper to taste. If you enjoy spice I recommend adding a bit of red pepper flakes!
