    1/4 cup olive oil
    3 onions, diced
    2 quarts vegetable stock
    1/2 cup porcini mushrooms
    2 tablespoons tomato paste
    2 teaspoons dried rosemary
    1 cup barley
    1 cup carrots, diced
    1 cup celery, diced
    Salt and Pepper
    Pecorino Cheese


Caramelize onions in olive oil.
Add tomato paste and rosemary and cook for 2 minutes.
Add stock, mushrooms, barley, carrots, celery, and salt and pepper. Cook for 25 more minutes over medium heat.
Add pecorino cheese and serve.
