Ingredients

    1 tbsp olive oil
    1 onion, diced
    2 carrots, finely diced
    3 celery ribs, finely diced
    1 small hot pepper, finely diced
    1 bay leaf
    1 tsp dried thyme (or 1-2 fresh branches)
    8 cups chicken stock
    1 oz chicken breast, chopped
    2 cups fresh spinach, sliced
    3 eggs,


Directions

Heat oil in stock pan and sautée onions, carrots, celery and pepper until softened but still have some crunch.
Add thyme and bay leaf and, heat through
Add stock and bring to a boil.
Let simmer for 20 minutes
Add spinach and cook for another 5 minutes
Break eggs into a bowl and whisk.
Slowly add eggs to soup while stirring with a fork
Serve.

Serving Size: Makes 6 1.5-cup servings
