    1 lb. Lean Ground Turkey, 93 % fat free
    1 large white or yellow onion, diced
    1 can Campbell's Healthy Request Cream of Mushroom Soup
    8 corn tortillas, quartered
    8 slices Velveeta Cheese Product
    4 oz. Green Chilis, diced


In a non-stick skillet, brown the ground turkey with the onions. Salt and pepper to taste. Allow the onions to fully carmelizes. Add a little water to the pan, as needed, to loosen any browned bits of turkey and onions. Scrape the bottom of the pan thoroughly to get all the tasty bits. Stir in the cream of mushroom soup. Remove from heat.

Preheat the oven to 350 degrees. Spray a 2 quart casserole dish with non-stick cooking spray. In prepared casserole dish, layer 4 quartered corn tortillas (16 pieces total). Layer half the turkey mixture, followed by half the green chilis and 4 cheese slices. Repeat the layers to use remaining ingredients, except whole wheat tortillas.

Place completed casserole in the oven. Cook until bubbly, roughly 45 minutes. Allow to stand 5 minutes before serving. While casserole is standing, heat whole wheat tortillas via favorite method. I typically heat them on my gas cooktop so they stay nice and chewy. Serve 3/4 cup of casserole with each tortilla. Roll up with a burrito and enjoy!

Makes 8 burritos, each made of 3/4 cup casserole and 1 tortilla.
