    1.5 cups TVP
    1.5 cups boiling water
    2 carrots chopped
    1/2 stalk celery chopped
    1/2 onion chopped
    10 oz spinach (fresh or defrosted from frozen)
    1 teaspoon salt
    1 teaspoon black pepper
    1 cup Silk Soy plain creamer
    1 cup tomato sauce plus extra for baking
    1/2 cup vegan Parmesan cheese
    2 teaspoons Italian dressing
    2 cloves garlic


Serve with a fresh green salad, and a balsamic dressing, and you have a dinner to die for!


Preheat oven to 400 F.
Add the boiling water to the TVP and let it sit and rehydrate.
Bring a medium pot of water to boil, and cook the manicotti tubes according to the package instructions.
Cook the onion, celery and carrots in a little water, stock or spray oil until soft.
Add the garlic and Italian seasoning.
Cook for 1 minute and add the burger crumbles and spinach.
Heat through and add the creamer, Parmesan cheese, salt and pepper.
When all is heated through, add a cup of tomato sauce.
Fill the 8 tubes of Manicotti and place in an ovenproof dish. Add some extra tomato sauce on top to stop it getting dry.
Cover with foil and cook for around 30 minutes until sauce is bubbling and smelling fabulous!
