Number of Servings: 5


    Potato, raw, 4 cup diced
    Butter, salted, 2 tbsp
    Onions, raw, 1 cup, sliced
    Salt, 1 tsp
    Water, tap, 4 cups
    Milk, nonfat, 1 cup
    Pepper, black, 1 tsp
    Sour Cream, reduced fat, .5 cup

    Optional: Add half a cup of Asiago Cheese at end of recipe for flavor, this adds 44 calories to each serving.


Saute the onions in the butter until onions are quite soft. Add salt and pepper, then the potatoes and saute for 5 minutes. Add water and bring to a boil. Cover and simmer until the potatoes are tender (about 10 min). Add milk and sour cream and stir to break up the sour cream. Season to taste.
