Ingredients

5 tablespoons ground flax meal
1 large egg
2 tablespoons unsweetened applesauce
1 inch of a banana, mashed
cinnamon to taste
Directions
Cut off one inch of a banana and mash it. Add the flax meal, egg, applesauce, and cinnamon to the mashed banana, and mix everything. The batter will be pretty gooey.
On a nonstick pan, spray cooking oil of your choice and let it heat on medium-high. Pour batter into large pancake shape. Let it cook on one side for about 5 minutes, or until the top starts to bubble. Carefully flip the pancake over, and cook an addition 2 to 5 minutes, until both sides are lightly browned. Serve with topping of your choice, or enjoy it as it is!
Makes 1 very large, very thick pancake.

I made this this morning and although I do not agree with the nutriition information, i will make it again. It was very sweet and enjoyable - 1/27/08

Glad you liked it! I should've mentioned that I make it using Bob's Redmill Ground Flax, which seems to be lower in calories and fat than other brands!
