Number of Servings: 8


    4 cups day old bread
    1/2 cup raisins
    2 cups 1% milk
    1 cup cooked or canned pumpkin
    2 eggs, separated
    2/3 cup brown sugar
    1 1/2 tsp. cinnamon
    3/4 tsp. nutmeg
    1/4 tsp. salt
    1/8 tsp. ground cloves


Combine bread cubes and raisins; placed in a greased (or sprayed with cooking spray) 2 quart baking dish. In a mixing bowl, combine milk, pumpkin, egg yolks, brown sugar, cinnamon, nutmeg, salt, and cloves; beat well. In a small mixing bowl, beat egg whites until stiff; fold into pumpkin mixture. Pour ove bread cubes and toss gently. Bake, uncovered, at 350 degrees for one hour or until a knife inserted near the center comes out clean. Serve warm. Makes 8 servings.
