3 sliced bacon
3 cloves garlic
1 tsp crushed red pepper
1 c diced onion
1 lb kale stemmed, roughly chopped
1 (15 oz) can cannellini beans
1 tsp salt
1 tbsp balsamic vinegar
1 tsp sugar
Directions
set a large heavy pot on med heat, cook bacon until desired cripsness. remove bacon and set aside, leaving dripping in the pot.
Add garlic and red pepper flakes to bacon drippings, cook until fragrant about 30 secs. add onion, cook till soft, stirring occasionally. add kale; cook; stirring occasionally until it starts to wilt, about 5 mins. add broth, cover and simmer on low until kale is just tender about 8 minutes. add beans simmer uncovered until liquid is almost evaporated about 5 mins. add remaining ingredients and bacon.
