    1 Tbsp. extra virgin olive oil
    4 large red potatoes, diced
    1 bell pepper, chopped
    1 medium onion, chopped
    8 oz. sliced mushrooms
    4 servings chicken or turkey smoked sausage
    1 1/2 tsp. seasoning salt
    1/2 tsp. black pepper
    1 tsp. garlic powder
    4 eggs
    1 cup reduced fat cheddar cheese


Heat oil in electric skillet to 350F. Add onions and potatoes. Season with salt, pepper, and garlic powder. Cook for 15 minutes. Add sausage and cook until potatoes are almost tender. Add mushrooms and bell pepper. Cook until potatoes are soft.

Fry eggs to desired doneness. Plate potato mixture, top with cheese and egg.
