    1 1/4 cup all purpose flour
    1 1/4 cup whole wheat flour
    1 1/2 cup old fashioned oats
    1 Tbls baking powder
    2 1/2 tsp baking soda
    3 tsp cinnamon
    1 tsp salt

    1/2 cup canola oil
    1/2 cup coconut oil
    2 cups unsweetened applesauce
    1/2 cup granulated white sugar
    2 eggs
    1/4 cup water
    1 cup fresh blueberries
    2 beets peeled and shredded (equals 1 cup)


Preheat oven to 350. Grease or line 24 muffin cups. Mix flours, oats, baking powder, baking soda, cinnamon and salt. In a separate bowl mix oils, applesauce, sugar, eggs, and water. Pour applesauce mixture into dry ingredients and stir to combine. Gently fold in beets and blueberries. Spoon batter into prepared muffin cups. Bake in preheated over for 25-30 minutes or until toothpick inserted in center of muffin comes out clean.
