15 extra large eggs
1 cup Kirkland Mexican Cheese blend
1 large red bell pepper, diced
1-2 tsp of your favorite herb blend
Directions
Grease muffin pan with nonstick spray and heat oven to 375 degrees.
Whisk eggs and spice blend. Put diced red pepper in each muffin cup, pour egg mixture in cups and top with cheese. Bake for 25-35 minutes. Freezes well for busy mornings and two muffins reheat for a minute in a microwave.
