Introduction

I wanted something a little creamier and richer tasting than my normal mac and cheese. This one tastes like it has lots of fat and calories but is actually pretty reasonable. Great for a meatless meal! I wanted something a little creamier and richer tasting than my normal mac and cheese. Number of Servings: 16

Ingredients

    2.5 ounces cream cheese
    6 ounces 2% Velveeta
    1 cup shredded 2% cheddar cheese
    16 oz. elbow macaroni
    1/4 cup nonfat milk
    2 tablespoons fresh parsley, chopped fine

Directions

Cook macaroni according to directions. In a seperate pan melt cream cheese and velveeta, stirring constantly. Add milk and shredded cheddar. Stir until everything is melted and the sauce is smooth. Add drained macaroni to sauce and mix well.

Serving Size: makes 16 1-cup servings
