Ingredients

    10 EGGS
    1 ZUCCHINI
    1 YELLOW SQUASH
    1/2 ONION
    2 TOMATOES
    2 CUPS BABY SPINACH
    2TSP OLIVE OIL

    Finely chop all veggies and greens; cook them until tender.

    Scramble eggs and milk together, add cooked vegetables.

    Scoop 1/3 cup at a time into muffin cups and bake 10-15 minutes until cooked through.
