    1 Cup Acini Di Pepe pasta
    1 Tbsp Extra Virgin Olive Oil
    1 Lb 90% Lean Ground Beef
    1 Lb Ground Pork
    4 Cloves Garlic, minced
    2 Cups Seasoned Bread Crumbs
    3 Extra Large Eggs
    3/4 Cups Grated Parmesan Cheese
    1 Tbsp Sea Salt
    6 Cups Chicken Broth
    5 Cups Frozen Spinach, thawed.


1. Preheat oven to 350 degrees F.
2. In a large mixing bowl combine beef, pork, bread crumbs and eggs.
3. Add 2 cloves minced garlic, cheese and salt. Mix well.
4. Shape into 1" meatballs; place on a cookie sheet.
5. Cook Meatballs in oven for 15-20 minutes, or until brown.
6. In a large sauce pan, bring salted water to a boil. Cook the Acini di Pepe al dente, approximately 8 minutes. Drain and rinse under cold water until cool.
7. In a medium soup pot, heat the olive oil until shimmering. Add the garlic and cook over moderate heat until lightly golden, about 1 minute.
8. Add the chicken broth and bring to a simmer.
9. Add the meatballs to the broth and simmer about 4 minutes.
10. Add the spinich and cooled pasta and simmer about 1 minute.
11. Ladle into shallow bowls and serve.
