Ingredients

    12oz Salmon fillet, cooked
    2 Egg whites (whisked)
    1 medium carrot, grated
    1/2 medium onion
    1/2cup whole wheat bread crumbs
    Your favourite seasonings

Tips

You could used canned salmon, however I found it a pain to pick out all the bones and skin, so much easier to bake a fresh fillet.


Directions

Cook the salmon fillet
Peel and chop the onion, set aside
Peel and grate the carrot, set aside
Combine all ingredients and form into patties

Heat a medium skillet and add a little extra virgin olive oil

Cook salmon patties about 3-5 minutes per side or until lightly browned.

Serving Size: makes approx 5-6 patties, depending how big you make them
