    Egg Yolk, 5 large
    Granulated Sugar, .5 cup
    Cocoa, dry powder, unsweetened, 2 tbsp
    Milk, 3.25%, 2 cup
    Heavy Cream, 3 fl oz
    Semisweet chocolate, chopped, 4 oz


Whisk eggs yolks, sugar, and cocoa powder together.
Combine milk and cream in a heavy saucepan and bring to a boil. Temper the egg mixture with a portion of the hot milk; return the mixture to the saucepan and continue cooking, stirring constantly, until the custard thickens and reaches 180-185* F
Remove from heat and add chocolate. stir until the chocolate melts, then strain and shill in an ice bath.
Processs custard in ice cream amker or put in freezer and whip with electric mixer every hour for 6 hours.

Serving Size: makes approximately 9- 3oz servings.
