    1 package graham crackers (9 rectangles)
    2 T. butter, melted
    1/2 t. cinnamon

    2 8-oz pkg Neufchatel cheese
    3/4 c. sugar
    3/4 c. sour cream
    4 eggs
    1 1/2 T. cornstarch
    2 t. lemon zest
    2 t. vanilla

    21-oz can cherry pie filling


Crush graham crackers, add cinnamon and butter and press into springform pan. Bake at 325 degrees for 8 minutes. Cream Neufchatel, add rest, pour into crust. Bake at 325 degrees for 50-60 minutes. Turn off oven and leave cheesecake in for another hour. Top with pie filling. Chill.

Serving Size: makes one 10-inch cheesecake, to be cut in 12 wedges
