Introduction

One of my "Once in a While" Favorites. One of my "Once in a While" Favorites.
Number of Servings: 4

Ingredients

    12 ounce can corned beef
    2- 15 ounces cans of diced or sliced potatoes, drained & rinsed (eliminates 40% of the sodium)
    8.5 ounce can of creamed corn (about 1 cup)
    1 cup chopped onion

Directions

IN a large frying pan add the onion and corned beef on medium high. Break up the corned beef and stir until the beef is soft.


ADD the potatoes and creamed corn. Chop us the potatoes into bite sized pieces with the end of a spatula. Stir to combine.


COVER and cook for 20-30 minutes, stirring 2 or 3 times.

Serving Size: Makes four 1 1/2 cup servingsa
