    1 large head of cauliflower, cut into 8ths
    3 large potatoes, chopped
    1 cup water
    1/2 cup reduced fat cream cheese
    1 bunch green onions, chopped small
    4 Tbsp. butter
    1 tsp. salt
    1/2 tsp. black pepper


Place cauliflower and potatoes in rice cooker and add about 1 cup of water to bottom. Cook till the rice cooker is done. When finished, transfer to a bowl and mash.

Melt butter over medium heat in saucepan. Add green onions and saute about 2 minutes. Add onions, cream cheese, and salt and pepper to potatoes and cauliflower and mix.

Serving Size: Makes 10 1 cup servings
