    2 big bunches of fresh collards. Stems cut out and julienned
    1 can cannellini beans
    3 cloves garlic diced
    4 chicken sausages sliced and then halved
    1 can diced tomatoes, juice and all
    1 medium onion, diced
    1 cup chicken broth
    balsamic vinegar, to taste


Cook onions, sausage and garlic until onions are tender. Add tomatoes and beans and simmer. Salt & pepper to taste. A dash or two of hot sauce to taste.
After cleaning and cutting the stems from the greens, roll up and julienne the collards. Add the greens a bit at a time until they wilt down. Add splashes of balsamic vinegar and chicken broth. Cover until the greens are cooked down enough to add the next batch until all are added. Cover and cook until desired tenderness.

Serving Size: This is from 2 large bunches of greens. Servings are pretty generous
