Ingredients

1 package (.25 oz) yeast
2 Tablespoons brown sugar
1 1/8 teaspoon salt
1 1/2 cups warm water
2 cups whole wheat flour
2 cups all purpose flour
2 cups water
2 Tablespoons baking soda
1 egg
1 teaspoon water
Course salt, garlic salt, cinnamon sugar, or other seasoning (optional)
Directions
In a large bowl, dissolve yeast, brown sugar, and salt into 1 1/2 cups water. Add whole wheat and all purpose flour and knead dough until smooth and elastic, about 8 minutes. Place in a greased bowl and turn to coat. Cover and let rise for one hour.
Combine 2 cups warm water and baking soda in 8-inch square pan. Line baking sheets with parchment paper.
After dough has risen, cut into 12 pieces. Roll each piece into a 2-3 foot rope, slightly thicker than a pencil. Twist into a pretzel shape and dip into the baking soda solution. Place on parchment covered baking sheets and let rise 15-20 minutes.
Preheat oven to 450 degrees.
Combine egg with 1 teaspoon of water and brush on tops of unbaked pretzels. Sprinkle desired seasoning over pretzels (may add additional calories/sodium).
Bake pretzels in preheated oven for 8 to 10 minutes, until golden brown.
