    Basmati brown rice (uncooked), 1.5 cup
    Rotel Hot Diced Tomatoes with habeneros, 1.25 cup (drained)
    Yellow Sweet Corn, Canned, 2 cup (drained)
    Black Bean, Canned Iberia, 2 cup (drained and rinsed)
    Soy Sauce, 2 individual packet
    Lime Juice, 1 lime yields
    Avocados, California (Haas), .5 fruit without skin and seeds, chopped
    2 and 1/3 cup very hot water
    Ground Cumin, to taste
    Cayenne Pepper, to taste


Stir all ingredients (except lime and avocado) into a 9x9 baking dish. Bake covered at 375 for one hour. Cool and stir in lime and diced avocado.
