Ingredients

    2 c lentils
    1/2 c parsley chopped
    1 T garlic, minced
    1 c green onion, sliced
    1/2 c cucumber sliced
    1/4 c extra virgin olive oil
    1/4 c red wine vinegar
    2 t basil
    1 c yellow peppers
    1 c red peppers
    1 1/2 t sea salt
    1 t pepper

Directions

cook lentils in boiling water for 20 -30 minutes

Remove from heat, drain and rinse under cold water.

Add all ingredients and toss
