    1/4 cup flax meal (4 Tbsp)
    1 large fresh egg
    1 tsp baking soda
    2 tsp cinnamon
    1 tsp coconut oil
    1 packet of sweetleaf stevia
    1/2 packet ideal sweetener


slightly melt coconut oil in coffee cup
mix all ingredients together. Microwave for 50 - 60 seconds. Let cool, slice, toast and top with butter or cream cheese or eat as a muffin.

Serving Size: Makes 1 large 2 serving muffin

    It's kind of cool how a muffin develops from this, but the taste is mainly baking soda. We won't be trying this recipe again. - 6/27/12
