Ingredients

    1 tsp olive oil
    1 6-inch whole-wheat pita
    1/4 cup canned, diced tomatoes
    1 basil leaf
    1/4 cup torn fresh spinach leaves
    1/4 cup roasted red peppers
    1/4 cup shredded part-skim mozzarella

Directions

Drizzle olive oil over pita. Mix tomatoes and basil and spread over pita. Add spinach leaves. Layer peppers over the spinach and top with mozzarella. Broil 4 minutes or until cheese melts.

  • My kids and I love Pita Pizzas! Contadina Pizza Sauce works better for us and I skip the olive oil--try the Sargento reduced fat italian cheese and a little spicy Mrs Dash on top for a kick! Endless possibilities ;) - 5/15/09

  • I broiled one side of the pita for a few min.Turned and topped the pizza as suggested except for the basil which I jullianed several leaves and sprinkled oner the pie at the end of the cooking time...Chef Jim - 5/15/09

  • a similar recipe is in the Sugar busters cookbook--I cut the pita in 1/2 so I have 2 thin circles & use turkey pepperoni & sometimes a teaspoon of store-bought pizza sauce--you need to brush a thin coat od olive oil on all of the pita of the bread doesn't crisp up good enough. Love this. - 5/15/09
