Ingredients

    4 skinless, boneless chicken breasts
    8 oz bottle light balsamic vinaigrette salad dressing (divided...reserve 1 Tbsp)
    1large tomato, sliced
    12 oz fresh mozzarella, sliced
    4 basil leaves
    freshly ground black pepper & sea salt to taste

Tips

Original recipe called for chicken to be fried in a large skillet coated with cooking spray and set over low heat for approximately 30 minutes. I like it better grilled!


Directions

Clean chicken breasts remove all visible fat. Place chicken in large resealable plastic bag. Pour dressing (reserving 1 Tbsp) over the chicken, seal, and marinate in the refrigerator for 12-24 hours.

Grill or broil until juices run clear.

Arrange chicken on a serving platter. Place a generous slice of fresh mozzarella on top of each piece. Place a leaf of basil on top of the cheese and cover with a slice of tomato. Dash vinaigreet over the platter and season with salt & pepper. Serve.
