Number of Servings: 4


    1 tsp extra virgin olive oil
    1 onion, chopped
    2 cloves garlic, chopped
    2-4 cups kale leaves, stems removed, chopped (I used 4 cups, loosely packed)
    2 cups quinoa, cooked & cooled (2/3 cups dry quinoa & cooked in 1.33 cups broth)
    1 apple, cored & chopped small
    1/4 cup raw pecans, chopped (~22 grams)
    1/4 cup dried cranberries
    1/2 lemon, juiced
    salt & pepper to taste


Heat oil in a large skillet over medium heat. Add onions and garlic and cook for 2-3 minutes, until onions are translucent and fragrant. Add kale, cook for another 4-5 minutes, until kale softens and turns bright green. Remove from heat and allow to cool.

Toss onion-kale mixture with the cooked quinoa and add all remaining ingredients. Chill or serve immediately.

Serving Size: Makes around 4 servings at 200 g each
