    Chicken Thigh, 2 thigh, bone and skin removed
    Beans, black, 1.5 cup
    *Barilla Mini Penne, 2 oz
    Green Peppers (bell peppers), 1 cup, chopped
    Onions, raw, 1 cup, chopped
    Garlic, 3 cloves
    Mozzarella Cheese, part skim milk, 1 oz
    Cream Cheese, 2 oz
    Sour Cream, reduced fat, 1 tbsp
    Jalapeno Peppers, 1 cup, sliced


1. In a medium saucepan, heat drained black beans over medium heat with 1/2 of green peppers, onions and garlic; set aside.
2. bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and place in a bowl.
3. Cut up chicken into bite size pieces. Cook chicken in large skillet.
4. Add green peppers, garlic, onions and black beans into the skillet. Let cook for 3-5 minutes.
5. Add sour cream, cream cheese and mozzarella cheese, stiring often; add pasta and stir.
6. Serve in bowl, topped with tomatoes and jalopenos.
